What if a restaurant knew its true margin before the dish left the pass?

The model is rarely the problem. The problem is that nobody decided what a good answer looks like, who is allowed to disagree with it, and what happens on the day it is confidently wrong.

Every useful system we have built ends at somebody who has to act. Design that moment and the rest becomes engineering. Skip it and the rest becomes a dashboard.

Wet hands, no time, one screen, a queue. If a tool survives a Saturday service it will survive almost anything an office can do to it.
